Description

Sweet Rice Lemon Cake

Ingredients

1stickbutter or margarine
2tbsphot water
1 1⁄2cupsugar
3eaeggs
1tbspLemon Juice
1tbspLemon extract
1tspvanilla
1 1⁄2cupEner-G Rice Mix
1⁄2cupEner-G Sweet Rice Flour
2tspEner-G Xanthan Gum
1tspbaking powder
1 1⁄4cupwater

Instructions

Preheat oven to 350 degrees F. Whip together the first 3 ingredients. Add next 4 ingredients. Whip until fluffy. In a separate bowl, thoroughly mix together Rice Mix, Sweet Rice Flour, Xanthan Gum and baking powder. Add 1-1/4 cup water to the egg mixture (the first mixture), mixing slightly. Mix in flour mixture for 1/2 minute. Scrape down sides and bottom. Mix another 1-1/2 minutes. Pour into 11" by 7" by 1-1/2" greased or sprayed (use gluten-free version) pan. Bake 55 to 58 minutes or until firm to the touch in middle. Let cool. Squeeze fresh lemon juice over cake or ice with your favorite Icing.
