Ener-G Brown Rice Flour Coffee Cake

Ingredients

1⁄4cupCurrants or Raisins
1⁄2cupShortening (not margarine)
1 1⁄4cupgranulated sugar
2eaeggs (beaten)
1tbspStrong Coffee (in beverage form)
1⁄2tspvanilla
3cupEner-G Brown Rice Flour
2tspbaking powder
1tspbaking soda
1⁄2cupbrown sugar
1⁄3cupFinely Chopped Walnuts
2tspGround Cinnamon
2tspInstant Coffee Crystals
1 1⁄2cupYogurt
1tbspLemon Juice

Instructions

Preheat oven to 350 degrees F. Soak raisins in hot water for 1/2 to 1 hour. Cream shortening, sugar, eggs, liquid coffee and vanilla together. Add the sifted Brown Rice Flour, baking powder and baking soda. Mix in raisins, brown sugar, walnuts, cinnamon and coffee crystals. Add yogurt and lemon juice and cream all the ingredients together to form a smooth batter. Pour into an oiled 10inch cake pan and bake for 55 to 60 minutes.
