Simple chicken batter using Ener-G Sweet Rice Flour and gluten-free tamari sauce. Just throw the ingredients in a zip-lock bag, marinade overnight, then fry the next day.

| 1⁄2 | cup | Ener-G Tapioca Flour |
| 1⁄2 | cup | tamari sauce (wheat-free) |
| 1⁄2 | cup | green onions (chopped) |
| 1⁄4 | cup | sugar |
| 4 | ea | eggs |
| 4 | ea | garlic cloves (minced) |
| 1 | tsp | salt |
| 2 1⁄2 | lb | frozen, chicken tenderloins (defrosted) |
| ea | extra sweet rice flour (to coat) |
Combine Ener-G Sweet Rice Flour, Ener-G Tapioca Flour all in a zip-lock or air-tight container and allow chicken to marinade overnight.
The next day, once ready to cook, heat up fryer oil to 350 degrees. Drain chicken from marinade and coat in additional sweet rice flour. Dust off any excess flour and fry chicken pieces until thoroughly cooked and slightly brown (about 3-5 minutes). Remove and allow oil to drain on paper towel.
Wheat-free (gluten-free) Tamari Sauce (aka Japanese Soy Sauce) can be found in health food stores and Asian grocery stores.
