Ener-G Sweet Rice Flour Corn Bread Muffins

| 1 | tbsp | sugar |
| 3 | tbsp | oil |
| 3⁄4 | cup | milk, soymilk, or rice milk |
| 1 1⁄4 | cup | Ener-G Corn Mix |
| 1⁄2 | cup | Ener-G Sweet Rice Flour |
| 1 | tsp | baking powder |
| 1 | tsp | baking soda |
Preheat oven to 425 degrees F. Grease 12 muffin cups. In large bowl, whip eggs. Add sugar and oil. Briefly mix together. Pour in milk and continue blending. Sift Ener-G Corn Mix, Ener-G Sweet Rice Flour, baking powder and baking soda into egg mixture. Spoon batter into prepared cups, about 3/4 full. Bake for 20 minutes. Turn out o wire rack to cool.
