Ener-G Sweet Rice Flour Corn Bread Muffins
|3⁄4||cup||milk, soymilk, or rice milk|
|1 1⁄4||cup||Ener-G Corn Mix|
|1⁄2||cup||Ener-G Sweet Rice Flour|
Preheat oven to 425 degrees F. Grease 12 muffin cups. In large bowl, whip eggs. Add sugar and oil. Briefly mix together. Pour in milk and continue blending. Sift Ener-G Corn Mix, Ener-G Sweet Rice Flour, baking powder and baking soda into egg mixture. Spoon batter into prepared cups, about 3/4 full. Bake for 20 minutes. Turn out o wire rack to cool.
