Ener-G Egg Replacer Gluten-Free Crackling Bread
| 1 1⁄2 | tbsp | flax meal |
| 1⁄4 | cup | hot water |
| 1 | cup | cracklings* |
| 2 1⁄2 | cup | yellow cornmeal |
| 2 | tsp | Ener-G Egg Replacer |
| 1 | tsp | baking soda |
| 1 | tsp | sugar |
| 1⁄2 | tsp | Ener-G Baking Powder |
| 1⁄2 | tsp | salt |
| 1⁄4 | cup | Applesauce |
| 1⁄4 | cup | extra virgin olive oil |
| 2 1⁄4 | cup | Buttermilk (plus 2 tbsp) |
Preheat oven to 415 degrees F. In a 10 inch iron skillet or similar pan over low heat, melt enough shortening to cover entire pan, sides included. If using a non-stick 10 inch pan, a light spray of gluten-free oil should be applied. In a small bowl, mix together the flax meal and hot water. Stir well and allow to set. In a separate bowl, mash the cracklings into small pieces, set aside. In a mixing bowl, blend together cornmeal Ener-G Egg Replacer, baking soda, sugar, salt, and baking powder until well blended. Add the cracklings and mix well. Pour in the applesauce, flax mixture, oil and buttermilk. Blend for 5-6 seconds on low speed, then increase to medium-high and mix for 12-14 seconds. Spoon the batter into the prepared pan and place into oven. Turn oven temperature down to 400 degrees F and bake for 32 minutes. Allow bread to set 1 minute after removing it from oven. Then turn the bread onto a plate or cooling rack.
*Cracklings are basically pork rinds - skin that has been cut in small pieces and deep fried
