Ener-G Rice Bran Gluten-Free Banana Nut Bread
|1 1⁄2||cup||Mashed Ripe Bananas|
|3⁄4||cup||Ener-G Rice Bran|
|1 1⁄2||cup||Ener-G White Rice Flour|
Preheat oven to 350 degrees F. Cream together shortening, honey and vanilla. Add bananas and mix well. Blend in Ener-G Rice Bran, Ener-G White Rice Flour, baking soda, egg*, nuts and raisins. Mix for 1 1/2 minutes. Bake in a 5x9 inch loaf pan, lined with wax paper. Bake for 55 to 60 minutes. Tap out of pan onto wire rack and cool. Makes one loaf.
*Egg-Free Version: Use 2 tsp Ener-G Egg Replacermixed with 2 tbsp water in place of 1 egg.
