Ener-G Egg Replacer Chicken and Almonds

Ingredients

1easmall onion (chopped)
2ozmushrooms (sliced)
1ozbutter or margarine
2tbspcornstarch
1⁄2cupmilk
12ozchicken (cooked chopped)
1⁄4tspground ginger
1⁄4tspground nutmeg
2tspEner-G Egg Replacer
2tbspwater
2⁄3cupplain yogurt
1⁄4tspsalt (optional)
1⁄4tspblack pepper
1ozflacked toasted almonds

Instructions

Fry onions and mushroom in butter until golden brown. Add cornstarch and cook for 1 minute. Remove from heat. Gradually stir in milk. Return to heat and stir until boiling. Add chicken and spices. Simmer gently for 5-7 minutes. Beat Ener-G Egg Replacer, 2 tablespoons water and yogurt together. Add to chicken mixture and cook over low heat until thickened. Season to taste and add almonds. Serve hot with boiled rice and vegetables.
