Light and Airy Cream Puffs
| 1⁄2 | cup | Unsalted Butter |
| 1 | cup | Boiling Water |
| 1 | cup | Ener-G White Rice Flour |
| 1⁄4 | tsp | salt |
| 4 | ea | eggs (room temperature) |
| 1 | tsp | vanilla extract (optional) |
Preheat Oven to 400º
Directions:
Add water, butter, salt and vanilla in a medium saucepan and bring to a boil on high heat. Reduce heat to medium. Add the flour at once and stir vigorously until mixture is smooth. Remove from heat and let cool for about 10 minutes. Add eggs one at a time, beating after each and until mixture is smooth. Repeat with all eggs. Drop spoonfuls of mixture on pan and bake. You can make mini, medium or large cream puffs.
Baking time: Approximately 30 minutes or until golden and puffy. Remove from oven and cool on wire rack. Once cooled, slice and fill with your favorite cream. See Marie's Cream Filling Recipe.
