Ingredients

6tspEner-G Egg Replacer
1cupEner-G White Rice Flour
1⁄4cupEner-G Potato Starch Flour
1⁄4cupCocoa
1cupsugar
1⁄4cupSoy Flour
1tspbaking soda
1⁄2tspsalt
1⁄8tspcinnamon
1⁄8tspnutmeg
2tspEner-G Xanthan Gum
1tspvanilla (gluten free)
2tbspextra virgin olive oil
1cupsoy milk or milk
1tbspvinegar

Instructions

Preheat Oven to 370 degrees. Combine Ener-G Egg Replacer, Ener-G White Rice Flour, Ener-G Potato Starch Flour, cocoa, sugar, baking soda, salt, cinnamon, soy flour, nutmeg and Xanthan Gum and mix for 20 seconds. Add vanilla, oil and soy milk. Mix for 10 seconds. Scrape down sides and mix 10 seconds. Add the Vinegar last, mixing from slowly to fast. Mix only 6 to 8 seconds. Pour into 9 inch round sprayed (use gluten-free version) or lightly greased pan. Place in preheated 370 degree oven. Turn oven down to 350 degrees. Bake approx. 30 min. Let cool 5-8 min before turning out of pan. Do not let batter sit before using. This cake needs to be baked immediately or it will lack volume.
