Homemade Italian Seasoned Tender Chicken Nuggets
1 ½ Ener-G Dry Plain Bread Crumbs (Seasoned, see recipe)
Pinch Seasoned Salt (Optional)
¼ Cup Grated Parmesan Cheese
¾ Cup Vegetable Oil (only if frying the nuggets)
½ Cup Olive Oil (only if frying the nuggets)
4 Boneless, Skinless Single Chicken Breasts (Cut lengthwise and then into nugget-sized pieces)
Baked: Preheat Oven 450° for 10 minutes. If you bake the nuggets, lightly grease a cookie sheet pan that has at least a ½ inch lip. Place the breaded nuggets in a single layer onto the pan and bake until cooked thoroughly - approximately 10-20 minutes, depending on the size of the chicken pieces.
Fried: Put the vegetable and olive oil in a medium saucepan and set aside. In a shallow dish, beat eggs. In another shallow dish, put the seasoned bread crumbs. Coat the chicken pieces with the egg and then the bread crumbs. Heat the oil on medium heat. Place the nuggets in a single layer, cover the pan and cook for about 3 to 5 minutes or when done. Turn the pieces over and cook the other side –another 3 to 5 minutes. Repeat process until all are thoroughly cooked.
Note: Turkey, Shrimp, Calamari and Fish can be substituted for Chicken.
If making for adults, try adding 1/8 Tsp. Cayenne Pepper for an added peppery taste.
