Description

Nicely Seasoned Crisp, Tender and Moist Cod Fillets

Ingredients

Instructions

1 Cup Ener-G Dry Plain Bread Crumbs
½ Tsp Garlic Powder
½ Tsp. Onion Powder
½ Tsp. Parsley Flakes
Salt & Pepper to taste (Optional)
1 Tsp. Lemon Pepper Seasoning (Mrs. Dash)
½ Tsp. Dill (Optional)
¼ Cup Mayonnaise
4 Tsp. Water
4 Cod Fillets (Approximately 3 or 4ozs each piece)

If baking, preheat Oven to 425° for 10 minutes.
If frying, put the vegetable and olive oil in a medium saucepan and set aside.

In a shallow dish, beat the mayonnaise and water. In another shallow dish, combine all other dry ingredients (except fish) and mix well. Coat the fish with the mayonnaise mixture, coating completely and then roll in the seasoned bread crumbs.

Baked:
Lightly grease a baking glass pan with a nonstick cooking spray. Place the breaded fish in a single layer onto the pan; do not allow fillets to touch. Bake until cooked thoroughly, approximately 15-20 minutes, depending on the size of the fish pieces. Fish will flake easily with a fork when done.

Fried:
Heat the oil on medium heat. Place the fish in a single layer, cover the pan and cook for about 4 to 6 minutes or when done. Turn the pieces over and cook the other side –another 4 to 6 minutes. Repeat process until all are thoroughly cooked. Fish will flake easily with a fork when done.

If making for adults, try adding 1/8 Tsp. Cayenne Pepper for an added peppery taste, instead of the dill.
Serve with lemon wedges.
