Pita Bread
| 1 | cup | Ener-G Brown Rice Flour |
| 2⁄3 | cup | Ener-G Tapioca Flour |
| 1⁄3 | cup | Ener-G Potato Starch Flour |
| 3 | tbsp | Ener-G Sweet Rice Flour |
| 3 | tbsp | flax meal |
| 2 | tbsp | sugar |
| 2 | tbsp | dry yeast |
| 2 | tsp | Ener-G Xanthan Gum |
| 1 1⁄2 | tbsp | Ener-G Rice Bran |
| 1 | tsp | Fruit pectin |
| 1⁄2 | tsp | salt |
| 1 | tsp | baking powder |
| 2 | ea | Large Eggs |
| 1 | ea | Egg White |
| 2 | tbsp | Olive oil |
In a mixing bowl of an electric mixer, combine the first 11 dry ingredients mixing until well blended. In a medium size separate bowl with a fork, whip together the next 3 wet ingredients until frothy. Add to dry ingredients and mix for at least 2 minutes. Place on cutting board or lightly dusted surface with cornmeal. Shape dough into a log. Cover and let set 12 min. Cut log in half and cut in half again. Take these 4 pieces of dough and shape into a circle about 4 ½ inches across. Place in a warm area or plastic bag with hot water to let rise about double in size. This might take from 30 minutes to one hour.
After 25 minutes, preheat oven to 425 degrees.
When dough rises, sprinkle with water and place in oven to bake for 6 minutes.
Turn one complete turn for even heating and bake 4 minutes.
Remove and let cool for 4 to 5 minutes.
