Brown Rice Muffins
| 2 | cup | Ener-G Brown Rice Flour |
| 1 | tbsp | Ener-G Baking Powder |
| 1 | cup | milk |
| 3 | tbsp | molasses or honey |
| 1⁄4 | cup | Vegetable Oil |
| 2 | ea | eggs (beaten) |
Preheat oven to 375 degrees F. Sift all dry ingredients together. Add milk, molasses and oil. Beat egg and add to mixture. Mix until smooth. Pour into oiled muffin pans. Fill 3/4 full. Bake for 20 to 25 minutes until done.
For variety add 1/3 cup sunflower seeds; 1/4 cup sesame seeds, 1/4 cup chopped nuts or 1/3 cup raisins. Fill almost to top of pans.
