| 3⁄4 | cup | Ener-G Foods potato starch flour |
| 3⁄4 | tsp | baking soda |
| 1 1⁄4 | tsp | baking powder |
| 1⁄2 | tsp | Ener-G Foods xanthan gum |
| 1⁄2 | tsp | salt |
| 1⁄2 | tsp | cinnamon |
| 1⁄2 | tsp | nutmeg |
| 1⁄4 | tsp | ginger |
| 1⁄2 | cup | Shortening |
| 2⁄3 | cup | Honey |
| 2 | ea | eggs (Well beaten) |
| 3⁄4 | oz | Pumpkin |
| 1⁄2 | cup | chopped nuts (Optional) |
Sift dry ingredients together. Set aside. Cream shortening and honey beating until light and fluffy. Add the well beaten eggs. Beat well. Add the dry ingredients alternately with the pumpkin, beating after each addition until smooth. Stir in the nuts and pour into well-greased 8" x 4" loaf pan and bake for 1 hour at 350 degrees
