Ingredients

1cupEner-G Corn Mix
3⁄4cupyellow corn meal
1⁄2cupgranulated sugar
1tbspbaking powder
1⁄4tspsalt
1 1⁄2cupCanned Cream-Style Corn
3⁄4cupegg ((3 large beaten eggs))
3⁄4cupGreek Yogurt

Instructions

1. Preheat oven to 375°. Line muffin pans with baking cups and spray with nonstick spray.

2. In a large mixing bowl, mix Ener-g corn mix, cornmeal, sugar, baking powder, and salt.

3. In a medium bowl, beat eggs with a fork. Add corn and yogurt. Mix well. Add to the flour mixture and beat until well mixed.

4. Pour into baking cups/muffin pan (about ¾ full). Bake for approximately 15 to 20 minutes. Baking varies depending on oven. Serve warm with butter, jam, cream cheese or your favorite topping.

Notes

Sugar: If you prefer corn muffins less sweet, instead of ½ cup sugar, add 3 tbsp. sugar. Another option that works really well is 1 tbsp. white sugar and 2 tbsp. coconut sugar. Enjoy! Refrigerate or freeze leftover muffins.
