Description

Apple Crumble Pie Vanilla Cookies

Ingredients

1pkgEner-G Select Vanilla Cookies (crushed)
1⁄2stickbutter (melted)
6eaGranny Smith apples
1eaLemon
1tspGround Cinnamon
1⁄4tspsalt
1⁄2cupbrown sugar
1⁄4tspground nutmeg

Instructions

CRUST:
1. In a medium-sized bowl, crush/crumble one package of Ener-G Select Vanilla Cookies (yields about 2 cups).
2. Pour the melted butter into the crumbled cookies, mix it, and pack it. You may use substitute shortening if you do not eat dairy.
3. Grease the pie tray and pack the dough all around the inside. If you have extra dough, you may use it as a crumbly topping on the pie.

FILLING:
1. Peel and core your apples then cut them into small pieces, and place them inside a medium-sized bowl.
2. Squeeze the lemon thoroughly and drain the juice over the cut-up apples.
3. Add in the brown sugar, cinnamon, nutmeg, and salt. Mix thoroughly.

FINAL STEPS:

1. Preheat your oven to 450 F.
2. Pour the apple mix into the pie crust. You may garnish the top with larger apple slices or more cookie crumbles, and some more nutmeg and/or cinnamon.
3. Place the apple crumble pie into the oven once it is fully preheated and bake for about 20 minutes. Since the crust is not raw dough, it does not need to be baked as long as a fully raw pie would.

Once it's done, serve and enjoy with a scoop of vanilla ice cream!

Notes

This recipe was used for a 7-inch pie tray. Adjust proportions accordingly for alternate sizes.
