Ener-G Egg Replacer Fruit Cake
| 2 | tsp | Ener-G Egg Replacer |
| 4 | tbsp | water |
| 1⁄4 | cup | Margarine or Butter |
| 1⁄2 | cup | granulated sugar |
| 6 | oz | Candied Mixed Fruit |
| 1 1⁄4 | cup | Water or Orange Juice |
| 1 3⁄4 | cup | all-purpose flour |
| 1 | tsp | baking powder |
| 1⁄2 | tsp | baking soda |
| 1 | tsp | All Spice |
Preheat oven to 350 degrees F. (177 degrees C). Briefly whip the Ener-G Egg Replacer in 4 tablespoons water until fluffy. Place margarine, sugar, dried fruit, whipped Egg Replacer and 1-1/4 cup water (or orange juice) in a saucepan. Bring to a boil and allow cooling for 10 minutes, stirring occasionally. Sift the flour, baking powder, baking soda and allspice together. Mix in boiled mixture and transfer to a greased 1 lb. loaf tin or a greased 8inch (20cm) diameter cake tin. Bake for 35 to 40 minutes. Let cool in tin.
