Ener-G Egg Replacer Fruit Biscuits

Ingredients

2⁄3stickmargarine
1⁄2cupbrown sugar (not packed)
1 2⁄5cupall-purpose flour
1tspbaking powder
1tspEner-G Egg Replacer (mixed with 1 tbsp water)
1tspMixed spices
2tbspMixed Citrus Peel
1⁄3cupRaisins or Curants
1tbspmilk

Instructions

Preheat oven to 350 degrees F. (180 degrees C. or gas mark 4). Cream margarine and sugar together until fluffy. Mix flour and baking powder together. Beat in Ener-G Egg Replacer and work in flour and spice. Add fruit and milk. Work to a stiff dough. Roll-out to 1/2 inch (1.3cm) and cut into 2-inch (5cm) cylinders with cutter. Place on greased trays and prick with fork. Bake for 30 minutes. Cool and remove from trays.
