Ener-G Egg Replacer Savory Rissoles

Ingredients

1eaOnion (chopped)
1⁄4stickbutter or margarine
1lbmashed potato
5ozcanned fish (drained)
6ozminced meat
2tspEner-G Egg Replacer
2tbspwater
1⁄2tspsalt
1⁄4tspblack pepper (optional)
2tspEner-G Egg Replacer (for coating batter)
4tbspwater for coating batter
1⁄4cupEner-G Bread Crumbs
1tspchopped parlsley (optional)

Instructions

Gently fry onion in 1/2 the margarine until soft and transparent. Add the onion and the rest of the margarine to the mashed potato. Mix in flaked fish or cooked meat, Ener-G Egg Replacer and seasoning. Shape into rounds. Dip into the coating batter and then into Ener-G Bread Crumbs. Heat some oil in shallow frying pan and fry the rissoles on both sides until golden brown. Drain on absorbent kitchen paper. Serve hot or cold.
