Ener-G Egg Replacer Savory Rissoles
| 1 | ea | Onion (chopped) |
| 1⁄4 | stick | butter or margarine |
| 1 | lb | mashed potato |
| 5 | oz | canned fish (drained) |
| 6 | oz | minced meat |
| 2 | tsp | Ener-G Egg Replacer |
| 2 | tbsp | water |
| 1⁄2 | tsp | salt |
| 1⁄4 | tsp | black pepper (optional) |
| 2 | tsp | Ener-G Egg Replacer (for coating batter) |
| 4 | tbsp | water for coating batter |
| 1⁄4 | cup | Ener-G Bread Crumbs |
| 1 | tsp | chopped parlsley (optional) |
Gently fry onion in 1/2 the margarine until soft and transparent. Add the onion and the rest of the margarine to the mashed potato. Mix in flaked fish or cooked meat, Ener-G Egg Replacer and seasoning. Shape into rounds. Dip into the coating batter and then into Ener-G Bread Crumbs. Heat some oil in shallow frying pan and fry the rissoles on both sides until golden brown. Drain on absorbent kitchen paper. Serve hot or cold.
