Ener-G Egg Replacer Pumpkin Pie with Walnuts
|4||oz||silken soft tofu|
|2||tbsp||Ener-G Egg Replacer|
|1⁄2||tsp||nutmeg or ginger (optional )|
|oz||garnish with walnuts (optional)|
Prepare pie crust according to instructions. Do not cook before filling. Dissolve arrowroot in juice. Blend with tofu, Ener-G Egg Replacer, maple syrup, salt and spices. Add pumpkin. Add more juice if needed to thicken puree. Fill shells. Bake at 350 degrees F. for 45 minutes. Garnish with walnuts. Cool and serve.
