Ener-G Egg Replacer Victorian Sponge Cake

Ingredients

2cupall-purpose flour (plus 2 tbsp)
1cupbrown sugar (packed)
1tbspbaking powder
1tspEner-G Egg Replacer
1⁄4cupShortening (plus 1/2 tbsp )
1 1⁄2cupwater
 eaflavor of your choice

Instructions

Preheat oven to 375 degrees F. (191 C) Mix first 3 ingredients plus the Ener-G Egg Replacer together. Add shortening and mix well. Add water and flavor and mix another 2 minutes. Pour into 1 greased 8inch diameter (220cm) cake pan. Bake for 30 minutes or until middle is firm to touch. Do not let batter sit before baking. This cake must be immediately baked or it will lack volume.
