Ener-G Egg Replacer White Cake

Ingredients

1cupgranulated sugar
2cupall-purpose flour
1tbspbaking powder
1tspsalt
4tspEner-G Egg Replacer
1cupShortening
1 1⁄2cupmilk
1tspvanilla
1⁄4tspalmond extract

Instructions

Preheat oven to 350 degrees F. (177 degrees C) Mix first 3 ingredients plus Ener-G Egg Replacer and the sugar together. Add remaining ingredients. Beat 3 to 4 minutes at medium speed. Pour into greased 8inch (20cm) diameter cake pans. Immediately place in oven. Bake for 25 minutes or until cake tester inserted in center comes out clean. Cool for 10 to 15 minutes before turning-out of pans. Do not let batter sit or volume will be lost.
