Ener-G Egg Replacer Layer Cake
|2 1⁄2||cup||all-purpose flour (unsifted)|
|1 1⁄2||cup||granulated sugar|
|1⁄2||cup||Shortening (not margarine)|
|2||tsp||Ener-G Egg Replacer|
Preheat oven to 375 degrees F. (193 degrees C). Sift first 4 ingredients together. Drop shortening into flour mixture. Add 3/4 cup water and vanilla. In a separate small bowl combine Ener-G Egg Replacerwith the 4 tablespoons of water and stir until smooth. Add to other ingredients. Beat 3 to 4 minutes at high speed. Add 1/2 cup water and beat 3 minutes. Pour into two 8 inch (20cm) cake pans. Bake for 30 to 35 minutes. Do not let this cake batter sit. This cake must be baked immediately or it will lack volume.
