Description

Ener-G Corn Mix Carob Devil's Food Cake

Ingredients

1⁄2cupShortening
1cupsugar (plus 2 tbsp)
2eaeggs (unbeaten)
1 1⁄2cupEner-G Corn Mix
1cupmilk
1tspvanilla
1cupcarob powder

Instructions

Preheat oven to 450 degrees F. Cream shortening thoroughly. Add sugar gradually and cream together until light and fluffy. Add eggs one at a time beating well after each egg. Add Ener-G Corn Mix alternately with milk. Beat after each addition until smooth. Stir in vanilla and carob powder. Pour batter into two 8-inch layer pans, which have been lined on bottoms with paper, or oil pans and dust with Corn Mix. This cake may also be baked in two 3-1/2inch by 7inch by 3inch loaf pans. Bake for 30 to 40 minutes. Cupcakes may be made with 1/2 the batter. Bake cupcakes for 20 to 25 minutes. Bake at 425 degrees F. for 25 minutes. Bake in two greased, 8-inch diameter cake pans for 25 minutes. Makes a moist, light cake.

Notes

A different variation of this recipe is to substitute 1/2 the sugar for 1/2 dark Karo syrup. In other words use 1/2 cup plus 1 tablespoon each of sugar and Karo syrup. Substitute 1/2 cup cocoa for the carob.
