Ener-G Corn Mix Corn Bread and Muffins
|1 1⁄3||cup||Ener-G Corn Mix|
Preheat oven to 425 degrees F. Whip together egg, sugar and milk. Mix in oil and Corn Mix, salt and baking powder. Pour into greased muffin tins 2/3 full and bake until firm (about 20 minutes) or into a greased 3-1/2-inch by 7-inch by 4-inch bread pan and bake for 25 to 30 minutes. Tap out onto wire rack to cool.
*This recipe works well with Ener-G Egg Replacer.
Suggestion: This recipe works best with either a mini-muffin pan (bake for 10 minutes) or two mini-loaf pans (4.5" x 2.5" each, bake for 30 minutes)
