Tabitha Brown is blowing up TikTok with her fresh and friendly “best mom ever” approach to vegan eats. Many vegans and vegetarians who don’t eat fake meat can now enjoy the great American classic, the BLT! Get the savory bacon vibes using carrots and your air fryer!

1 large heirloom tomato

Several crisp lettuce leaves

Vegan mayonnaise

Portion of Vegan Carrot Bacon

4 slices Ener-G Gluten-Free Light Classic White Bread

3-4 large organic carrots

3 tablespoons Extra Virgin Olive Oil

3 tablespoons Liquid Smoke
-
2 tablespoons Coconut Aminos
-
1 tablespoons Tamari
-
1 tablespoon Maple syrup

1 teaspoon onion powder
-
1 teaspoon garlic powder
-
1 teaspoon smoked paprika

1/2 teaspoon salt
-
3-4 grinds freshly ground pepper
Vegan Carrot Bacon
Directions
To make Vegan Carrot Bacon:
Add all liquids and spices into a mixing bowl and whisk to incorporate. Set aside.
Wash carrots thoroughly. Slice carrots, lengthwise, using a mandoline, or vegetable peeler to create long carrot bacon strips. Place carrot strips in marinade, taking care to coat each carrot strip. Let carrot strips marinate for as little as 5 minutes or up to 20 minutes.
Preheat oven to 350 or use air fryer on bake setting at 350 degrees. Bake carrot bacon strips until crispy, turning halfway through. Conventional oven 20 minutes, Air Fryer 5 minutes. (Note: Carrots will shrink in size.)
Spread vegan mayonnaise onto slices of Ener-G Light Classic White bread. Add a thick slice of heirloom tomato, several crisp lettuce leaves, and a nice portion of vegan carrot bacon. Top with another slice of Ener-G Light Classic White bread and enjoy!
Make a second Vegan Carrot BLT sandwich to enjoy with a friend or store the remaining vegan carrot bacon in a ziptop bag or sealed container for up to 3 days.
